Each dish tells a story, shaped by childhood memories, grounded in tradition and elevated with a contemporary touch.
Drawing on Chef Dev Biswal’s heritage, we work with ingredients such as mustard oil, tamarind, jaggery, sun-dried mango and black pepper to bring balance, warmth and depth to every plate. Alongside more refined compositions, we also celebrate Odisha’s vibrant street food culture, with dishes traditionally served on banana leaves or bronze plates, reflecting the spirit of dining in India.
Sustainability and craftsmanship lie at the heart of our kitchen. With a strong emphasis on making our food in-house and avoiding processed ingredients, we honour the origins of each dish while delivering a thoughtful and memorable taste of Odisha in Canterbury.
